Accidentally saw on youtube how to make inverted pineapple pie, urgently decided to make and show you. At home, the pineapple and berry pie is very easy and quick to make, literally 10 minutes and baking time. I recommend it for those who are waiting for unexpected guests and do not have time to come up with complicated desserts.
Ingredients for the pineapple cake baked in the oven (the measure is 200 ml glasses):
1 jar of sweet pineapple (I have a Net weight of 680g)
Butter – 50g
granulated sugar – 4 tablespoons (about 80g)
A little bit of tinned cherries
For the pastry:
granulated sugar – 1 tbsp.
Salt – 1 pinch
100 g. room temperature butter
Wheat flour – 1.5 cups (I added 2 more tablespoons, because I like it thicker)
One egg – 2 pcs.
Vanilla – to taste
Leavening agent for dough – 2 tsp.
Pineapple juice – drain from pineapple jar
How to make pineapple shifter pie by homemade recipe in the oven
To start making pineapple pie, turn on the oven and preheat it to 180 degrees.
Take a shallow saucepan, put 50 g of butter in it, add 4 spoons of sugar and warm, stirring, until the sugar has completely dissolved.
In the bottom of a cake pan (I have a 22 cm diameter), put pineapple slices and put a cherry in the center of each slices (if you don’t have any cherries, you can do it without them).
Pour the melted sugar over the pineapple and set aside while we make the dough.
Take a deep bowl and sift flour with salt and baking powder.
Melt the butter in the mixer bowl and beat until pale in color.
Then beat the eggs and mix with a mixer for 2 minutes.
Add the sugar and beat for about another minute.
Now turn the mixer on low speed and add half of the flour. Stir it in.
Pour in pineapple juice and remaining flour and knead the dough until it is the consistency of liquid sour cream.
Pour the batter over the pineapple circles and place the pineapple cake in the oven for 40-45 minutes.
Bake the pie until nicely golden. You can check the readiness with a dry skewer or a matchstick – poke the pie and if the match came out dry, the pie is ready.
Leave the ready pie in the form for 10 minutes, and then turn it on a dish. I sometimes pour a couple of spoonfuls of cognac or cherry liqueur on top.
Serve the pineapple upside-down pie warm to your guests (but cold is also very tasty and juicy).
